Easy peach crisp is one of those desserts that are well worth the wait. The Butter Pecan cake mix, coconut, and yummy pecans are my favorite combination for this dish. Some people just like peanuts that are lightly salted, and I personally have never used walnuts, but I think that they would taste great too. Then I love to scoop some ice cream on top and let it melt. It is so good and the ice cream gives it a creamy, yummy flavor. My teenager even told me what a great job I did on the easy peach crisp, and you just don’t get that very often. Fall is in the air and the peaches are going fast so I used a quart of my peaches that I had home canned, but you could also use a can from the store.
My grandson turned one the other day. We had a fun little birthday party. He was so cute, when it cake to eating his cake. His theme was motorcycles. (Imagine that!) His mom had put Oreo’s on top of the cake so that it looked like dirt. Then she put a motorcycle on top. He was picking the Oreo’s off and leaving the rest. Then his dad was helping him by giving him some frosting. Ya he liked that too. So then he started putting his whole hand into it and then his face. By the time he got done, he had chocolate cake up his nose and all over his face. I know that he thought that this was a good day. He got a lot of presents too. But all good things must come to an end and trying to get the chocolate cake out of his nose was the hardest. I wonder if kids ever think that we parents do strange things? Well it is a given. We do.
I remember when I was young and my brother had a birthday cake. I picked some of the frosting off of it. Yes, as we look back on the picture of that birthday, I see that cake that is missing part of its frosting and remember how much trouble I got into. The crazy thing is, I am pretty sure that I would do it again. I love frosting! It is the best part of the cake as far as I’m concerned. So my little grandson, if you ever get in trouble for picking the frosting off of the cake, tell your parents, remember when you encouraged me and almost made me dig into my cake. Who is truly to blame?
Now go have yourself a treat of this easy peach crisp!
- 1 quart bottle of peaches, or a 29 ounce can (with the juice about 3/4 cup juice
- 1 (15.5 ounce) box Butter Pecan cake mix (put over fruit dry)
- 1/2 cup butter, melted
- 1 cup coconut
- 1 cup nuts, chopped (peanuts, pecans or walnuts)
- Heat oven to 325 degrees.
- In a 9″ x 13″ baking pan, place the peaches.
- Next layer the cake mix evenly over the peaches.
- Drizzle the melted butter evenly over the dry cake mix.
- Then add the coconut evenly.
- Last, sprinkle the chopped nuts on top.
- Bake for 50 minutes.
- When done, add ice cream or whipping cream.
