Easy chicken rice bowls are just that, nice and easy. I also love that they are good for you. There are so many things that you can add or take away from this recipe that makes it fit everyone’s needs. Just use your crock pot, place the chicken in it and cook it and in a few hours, cook some rice and you will be set! These easy chicken rice bowls are the perfect easy dinner. I am a Hairstylist and on Fridays I have quite a few ladies that get their hair done for the weekend and so I am pretty busy! And so this is what we ate on Friday, and they were perfect. I can’t wait to make them again!

Easy Chicken Rice Bowls

We had the opportunity to tend our grandson and his cousins this week end, while their families ran a race called the dirty dash! Now you ask what is the dirty dash? It is a military boot camp 5K,mud run obstacle course with a lot of mud! Yep, I told my husband that I would support him next year, he laughed and said “no thanks”. I guess growing up on farms, we had enough mud moving sprinkler pipes. Good for all those that went and supported this race, because the people that put it on did a fabulous job. I was amazed at how many people showed up for this race. I am pretty sure that it was over 1000. If this sounds like something you might be interested in you can look up the dirty dash in Midway Utah, and if you run in it, don’t where your best clothes. And as it goes for me, I will stick to babysitting! Oh ya and if your kids under 13 years of age want to run the race, they have one just for them called the Piglet Plunge. I am not sure how far that one goes, but I am pretty sure that race would be more my speed. But I guess I will just have to leave that to the other brave souls out there. And yes, they did look like little pigs that rolled in the mud when they were done. I think I will just stick to cooking!

Easy Chicken Rice Bowls

Ingredients
  • 1 pound boneless, skinless chicken breasts (About 2 large breasts)
  • 3 cups low sodium chicken broth
  • 1½ tsp onions powder
  • 1 tsp garlic powder
  • 1½ tsp chili powder
  • 1¼ tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • 1 (15 ounce) can black beans, drained and rinsed
  • 2½ cups rice (white or brown)
  • 1½ - 2 cups shredded Colby jack cheese (or Medium Sharp)
Additional toppings:
  • lettuce
  • Mango salsa
  • fresh tomatoes
  • sour cream
  • onions
  • avocados
Instructions
  1. Place chicken breasts in a slow cooker with the chicken broth.
  2. Add onion powder, garlic powder, chili powder, cumin, salt and pepper.
  3. Cook on high for 3½ - 4 hours, or on low for 5½ hours.
  4. When center of the chicken reaches 160 degrees, shred the chicken.
  5. Add the black beans that have been rinsed and drained.
  6. Cook rice according to package directions.
  7. Place cooked rice in a bowl, and add the chicken mixed with the beans.
  8. Top with cheese and any additional toppings you wish.
