It seems like along with Spring, come the challenges of keeping up with all of the activities that are going on! We are working toward getting our youngest child graduated from high school. I do not know where the years have gone? I think that I might feel like some of the rest of you, and wish I could go back and do things differently. However since that is not going to happen, I guess that I will just work on spoiling the grand kids!! But I know that I am still learning and that I can just love my kids and encourage them in whatever they do. One thing that they have taught me is that I can talk until I am blue in the face, and they are going to do things the way that they want to. I am pretty sure that I did the same thing to my parents? Just like we would go back and do things differently, I think that we would do them the same, because it is everything that we have been through that has made us who we are today. I guess that is why we have to let our kids make mistakes too. Ouch, did I just say that?
I think one of the most important things is that we need to enjoy right where we are and not wish our lives away. One of my favorite sayings has a picture of a lion and below it, it says “I don’t lose. Either I learn or I win”. I think that this is a great lesson in life. Everything helps us to grow. Little baby steps and one day at a time; making little changes for the better, and getting back up more times than we fall down. And just making sure that we have time for the most important things in life. Friends and family! Don’t forget to pamper yourself once in awhile too.

If you are lucky, you just might have leftovers, Easy Crock Pot Italian Chicken is one leftover that my kids will eat. I have some leftovers that some of my picky children will not eat. However, my oldest son is really good about eating leftovers. He is like his mom and he would rather spend his money on something besides eating out. - 4 boneless, skinless chicken breasts
- 1 (16 ounce bottle) Zesty Italian Dressing
- ¼ tsp cumin
- ¼ tsp chili powder
- 1 clove garlic, minced
- 4 ounces of cream cheese (add at the end)
- Place chicken breasts in the bottom of a crock pot.
- Pour the dressing over the chicken, add then add the cumin, chili powder, and garlic.
- Stir just a little.
- Let cook for 3 - 4 hours on high or 6 - 8 hours on low,.
- minutes before serving shred the chicken with 2 forks (or I use a potato masher)!
- Add the cream cheese.
- Serve over rice or noodles.
