Are you looking for a healthy snack? Look no further. This moist Gluten-free banana bread is so good. It is so moist and very delicious. We have a neighbor that is not able to eat gluten and so I thought that I would take them a treat today. However I did make a small loaf for us because I could not miss out on tasting it too. My son came out of his room and said “what is that smell’? I told him banana bread and he said, “well it smells so good”. And the taste is just the same. My kids love it even if it is gluten free. I know that your family will too. I would have made this earlier, but I didn’t have any bananas. Funny how that goes. Sometimes those bananas will go bad before they get eaten, and then when you want them, they get eaten. Oh well, this was perfect timing.
This week my son went to his last high school dance. I don’t know where the time has gone. My baby is going to graduate! Then on to bigger and better things. He is not sure just yet what that will be, but I know he will figure it out. This was his first dance and he enjoyed it. He said that the only problem was, that where they ate took 45 minutes longer than they had planned because that is where everyone decided to eat. I have done a couple of dinners where we served it right in our home. That was a lot of fun. We have enjoyed having teenagers in the house, however sometimes mom and dad can be a little, or a lot, embarrassing. Isn’t that what parents are for? Well aren’t we so grateful that our kids can keep us humble?

Also I want to give a big shout out to my sister who does taxes. Wahoo! Today is the last day and it will be nice to have my sister back. We talk a lot but not in the months of January – April. She is very busy and so I try not to bug her too much. I am really grateful for her talents and I am so glad that she does my taxes and I don’t have too. I would much rather cook. - 1/2 cup butter, softened
- 1/2 cup sugar or Stevia
- 2 Tbsp milk
- 2 Tbsp yogurt, vanilla or plain
- 2 eggs
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 3 – 4 very ripe bananas, mashed
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups Gluten free flour
- 1 cup chocolate chips
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream butter and sugar.
- Then add milk, yogurt, eggs, vanilla, cinnamon, and mashed bananas; blend well.
- Then add baking powder, soda, salt, and flour.
- Fold in chocolate chips.
- Lightly grease and flour a 9″ X 5″ loaf pan.
- Bake for 50 – 55 minutes, until a wooden pick or cake tester comes out clean
- Let cool in pan for 5 minutes and then remove to a wire rack.
- Store any leftovers in an airtight container.
