Fresh out of the oven is the very best way to eat cinnamon swirl bread.  I think that you will also love to use this bread to make french toast.  This bread is so soft and fluffy.  I usually double the recipe, otherwise it is all gone the first day that I make it.  It is great to put it in the toaster and then add some honey when it comes out.  Doesn’t that sound like a great lunch?  You can always add peanut butter too.  Also, can you imagine how good your house is going to smell?  Make some cinnamon swirl bread today.

Serves: 2 loaves
  • 6 – 6 1/2 cups all-purpose flour or bread flour
  • 1/3 cup honey or sugar
  • 1 1/2 tsps salt
  • 4 1/2 tsp yeast (rapid rise) or 2 packages
  • 1/2 cup warm water (120 -130 degrees)
  • 1/2 tsp sugar
  • 1 cup milk
  • 1/3 cup butter
  • 2 eggs
  • Middle of bread:
  • 3 Tbsp butter
  • 1/4 cup brown sugar
  • 1 1/2 tsp cinnamon
  1. In a mixer with a dough hook, mix 2 1/2 cups flour, 1/3 cup honey or sugar and salt.
  2. In a 2 cup container place water that is 120-130 degrees and then add yeast and 1/2 tsp sugar. Let it rise, for about 4 – 5 minutes.
  3. Heat milk and 1/3 cup butter until butter is melted, then stir into dry ingredients.
  4. Add eggs and enough remaining flour to make soft dough.
  5. Then add the yeast mixture, and the rest of the flour. Don’t add too much flour; dough should be a little tacky.
  6. Mix at least 5 – 7 minutes.
  7. Place dough on a counter that has been greased or oiled; let rest for 10 minutes.
  8. Divide dough into two equal pieces.
  9. Roll each piece into approximately a 16″ x 7″ rectangle.
  10. Brush rectangles with 1 1/2 tsps melted butter up to 1/2″ of the sides.
  11. Combine 1/4 cup sugar and 1 1/2 tsps cinnamon, then sprinkle evenly over dough.
  12. Starting at the short end of each rectangle, roll up tightly and pinch seams and ends to seal. Place, seam side down, in 2 greased 9″ X 5″ loaf pans.
  13. Cover with plastic wrap sprayed with cooking spray and let rise in warm, dry place until doubled in size, (about 45 minutes to 1 hour).
  14. Bake at 375 degrees for 40 – 45 minutes or until done.
  15. Remove from pans and cool on a wire rack.
