Ingredients
  • 6 boneless skinless chicken breasts cut into halves
  • salt and pepper to flavor
  • 1½ cups chicken broth
  • ½ tsp. rosemary, ground or crushed
  • ¼ tsp. dried thyme
  • ¼ tsp. garlic powder
  • 2 small sweet potatoes, peeled and cut into cubes
  • 3 new red potatoes , peeled and cubed
  • 1 cup carrots cut into smaller pieces
  • 8 oz. pkg. frozen cut green beans, or 1 (15 oz) can, or use fresh
  • Parsley for garnishing
Instructions
  1. In a large skillet, place a little oil in the bottom and cook chicken on medium heat: add salt and pepper to flavor. Cook until almost cooked through.
  2. Add chicken broth, rosemary, thyme, garlic powder, both kinds of potatoes, carrots and beans.
  3. Let it come to a slow boil and then cover and cook on low for about 25 minutes or until the potatoes and carrots are soft.
  4. If using a can of beans, wait for 15 minutes before adding the beans to the mixture so that they won't go soggy.
  5. Garnish with a little dried parsley.
